Ingredients
  • Grated/riced cauliflower 4 cups
  • Olive Oil 2-6 tbsp
  • Low Sodium Soy Sauce 4 tbsp
  • Baby Bella Mushrooms 1/2 cup
  • Medium shrimp 1 lb.
  • Green Onions 1 cup

For A Delicious Dinner

Method

  1. Grate 4 cups of Cauliflower.
  2. Heat about 2 tbsp of Olive Oil in Wok or large skillet.
  3. Wait until the oil is hot then add the grated cauliflower to the pan.
  4. Cook until cauliflower starts to turn brown and crispy. (very important that it starts to dry out, this can take 15-20 mins)
  5. If it starts to dry out, add more olive oil.
  6. Add 2 tbsp of low sodium soy sauce.
  7. Add 3 eggs (scramble on the side before mixing)
  8. Add 1/2 cup of diced baby Bella mushrooms.
  9. Add 1 pound of bite sized Shrimp.
  10. Add 2 tbsp more low sodium soy sauce.
  11. Add 1 cup Green Onions.
  12. Cook together for 1-2 minutes and serve hot!
