Ingredients
- Carrots (peeled & cut into slices) 3/4 lb
- Orange juice 1 1/2 cups
- Apricot nectar 1 cup
- Lemon juice 1/4 cup

Method
- Place carrots in a steamer basket over boiling water.
- Cover and steam 15 minutes or until very tender.
- Transfer carrots to a blender and add remaining ingredients.
- Puree. Serve soup chilled or at room temperature.
