  • Carrots (peeled & cut into slices) 3/4 lb
  • Orange juice 1 1/2 cups
  • Apricot nectar 1 cup
  • Lemon juice 1/4 cup

Method

  1. Place carrots in a steamer basket over boiling water.
  2. Cover and steam 15 minutes or until very tender.
  3. Transfer carrots to a blender and add remaining ingredients.
  4. Puree. Serve soup chilled or at room temperature.
