Ingredients
- Water 2/3 cup & 4 tbsp.
- Bulgur 1/3 cup
- Fresh carrots, chopped 1 1/3 cups
- Sticks celery, chopped 2
- Tomato, chopped 1
- Green pepper, seeded and chopped 1
- Red pepper, seeded and chopped 1
- Small cucumber, chopped 1
- Olive oil 2 3/4 tbsp.
- Lemon juice 2 3/4 tbsp.
- Clove garlic, crushed 1
- Fresh basil, chopped 1 tbsp + 1 tsp

Method
- Bring water to a boil in a heavy saucepan.
- Stir in bulgur.
- Cover pan, reduce heat to low and simmer 20-25 minutes.
- Remove from heat and let stand for 10 minutes before fluffing with a fork.
- In a large bowl, combine bulgur with the next 6 ingredients.
- Combine last 4 ingredients in a jar with a tight fitting lid.
- Shake well and pour over salad. Give it a gentle toss.
