Ingredients
  • Water 2/3 cup & 4 tbsp.
  • Bulgur 1/3 cup
  • Fresh carrots, chopped 1 1/3 cups
  • Sticks celery, chopped 2
  • Tomato, chopped 1
  • Green pepper, seeded and chopped 1
  • Red pepper, seeded and chopped 1
  • Small cucumber, chopped 1
  • Olive oil 2 3/4 tbsp.
  • Lemon juice 2 3/4 tbsp.
  • Clove garlic, crushed 1
  • Fresh basil, chopped 1 tbsp + 1 tsp

Method

  1. Bring water to a boil in a heavy saucepan.
  2. Stir in bulgur.
  3. Cover pan, reduce heat to low and simmer 20-25 minutes.
  4. Remove from heat and let stand for 10 minutes before fluffing with a fork.
  5. In a large bowl, combine bulgur with the next 6 ingredients.
  6. Combine last 4 ingredients in a jar with a tight fitting lid.
  7. Shake well and pour over salad. Give it a gentle toss.
