  • Tri-colored (veggie) rotini pasta 1 box
  • Medium head broccoli (chopped) 1
  • Medium Red onion (diced fine)
  • Mayonnaise 2 cups
  • Sugar 1/2 cup
  • Apple cider vinegar 2 tbsp

Method

  1. Cook pasta according to package directions, with a few drops of olive oil and dashes of salt in the water to keep the pasta from sticking.
  2. Drain and rinse under cold water until cool and set aside in a large bowl.
  3. Wash the broccoli well and chop into small florets.
  4. Chop the onion fine, and mix the broccoli and onions with the pasta mix well.
  5. In a medium bowl, whisk together the mayonnaise, sugar, and apple cider vinegar well.
  6. Pour the mixture over the top of the pasta, broccoli and onions, and stir to combine.
  7. Refrigerate until ready to serve.
