- Ice 1 lb.
- water 2 gallons
- Salt
- Fresh spinach 1 lb.

Method
- Mix ice and 1 gallon of water in large bowl. Set aside
- Pour remaining gallon of water into large pot.
- Add a pinch of salt and bring to a boil. Submerge spinach in the boiling water and cook for 2 minutes.
- Drain the spinach and immediately submerge it in ice water.
- Let cool completely.
- Reheat spinach gently when ready to use.
