  • Chicken (cut into 8 pieces) 1
  • Fresh lemon juice 1/4 cup
  • Olive oil 2 tbsp
  • Garlic (minced) 1 clove
  • Fresh oregano (chopped) 1 tbsp
  • Sea salt to taste
  • Pepper to taste

Method

  1. Arrange the chicken pieces, skin side down, in a baking dish.
  2. In a small bowl, whisk together the lemon juice, olive oil, garlic, oregano, salt and pepper. Pour over the chicken.
  3. Let stand for one hour. Preheat the oven to 400 (F) degrees. Roast the chicken for 30 minutes.
  4. Turn the pieces skin side up and continue to roast until browned and the juices run clear when thigh is pierced.
  5. Transfer the chicken to a platter, cover loosely with aluminum foil, and keep warm.
  6. Pour the pan juices through a fine mesh sieve into a bowl and skim off the fat.
  7. Pour juices over chicken and serve.
