- Lamb shanks 4
- Cooking oil 2 Tbsp.
- Onions (finely chopped) 1 cup
- Celery (chopped) 1 cup
- Wine vinegar 1/2 cup
- Garlic (unpeeled) 30 cloves

Method
- Cut fell from lamb. Season lamb with salt and pepper.
- Brown in hot oil; drain off fat. Add onions, celery, wine vinegar, 1 tsp. salt, and 1/4 tsp. pepper.
- Top with unpeeled garlic. Bring to boiling; reduce heat. Cover; simmer 1 1/2 hours.
- Transfer to serving plate. Skim fat from juices; spoon vegetables and juices over lamb.
