  • Lamb shanks 4
  • Cooking oil 2 Tbsp.
  • Onions (finely chopped) 1 cup
  • Celery (chopped) 1 cup
  • Wine vinegar 1/2 cup
  • Garlic (unpeeled) 30 cloves

Method

  1. Cut fell from lamb. Season lamb with salt and pepper.
  2. Brown in hot oil; drain off fat. Add onions, celery, wine vinegar, 1 tsp. salt, and 1/4 tsp. pepper.
  3. Top with unpeeled garlic. Bring to boiling; reduce heat. Cover; simmer 1 1/2 hours.
  4. Transfer to serving plate. Skim fat from juices; spoon vegetables and juices over lamb.
