  • Linguine 1 pound
  • Fresh basil 1 bunch
  • Avocados (pitted & peeled) 2
  • Lemon juice 2 tablespoons
  • Garlic 3 cloves
  • Olive oil 1⁄2 cup
  • Sea salt to taste
  • Black pepper (Freshly ground) to taste
  • Cherry tomatoes / sliced sun-dried tomatoes (optional) 1 cup halved

Method

  1. Bring a large pot of heavily salted water to a boil.
  2. Add linguine and cook according to package directions. Drain and set aside.
  3. Meanwhile, make the pesto by combining basil, avocados, lemon juice, garlic, and oil in a food processor.
  4. Process until smooth. Season generously with salt and pepper. Toss pasta with pesto.
  5. For an extra touch of color and flavor, top pasta with cherry or sun-dried tomatoes.
  6. Divide pasta among serving bowls and garnish each serving with a basil leaf.
