  • Chicken breast 1 lb
  • Broccoli florets 1 lb
  • Mushrooms (sliced) 8 oz
  • Oil for frying 3 tbsp.
  • Salt to taste
  • Pepper to taste
  • For the Sauce:
  • Garlic (minced) 3 cloves
  • Ginger (minced) 1 tbsp.
  • Sesame oil 2 tsp.
  • Reduced-sodium soy sauce 1⁄3 cup
  • Chicken broth 1 cup
  • Almond flour 1⁄4 cup

Nice and healthy, but still delicious!

Method

  1. In a large pan, on medium-high heat, add 1 tablespoon of oil.
  2. Once the oil is hot, add chicken, season with salt and pepper, and sauté until cooked through and browned.
  3. Remove cooked chicken from pan and set aside.
  4. In the same pan, heat 1 tablespoon of oil and add mushrooms.
  5. When the mushrooms are soft, add broccoli florets and stir-fry until the broccoli is tender.
  6. Remove cooked mushrooms and broccoli from the pan and set aside.
  7. Add 1 tablespoon of oil to the pan and sauté garlic and ginger until fragrant. Add the remaining sauce and stir.
  8. Return the chicken and vegetables to the saucepan; stir until heated through.
