Ingredients
  • Chicken breast 1 pound
  • Broccoli florets 1 pound
  • Mushrooms (sliced) 8 ounces
  • Oil for frying 3 tablespoons
  • Salt
  • Pepper
  • For the Sauce:
  • Garlic (minced) 3 cloves
  • Ginger (minced) 1 tablespoon
  • Sesame oil 2 teaspoons
  • Reduced-sodium soy sauce 1⁄3 cup
  • Chicken broth 1 cup
  • Almond flour 1⁄4 cup

Nice and healthy, but still delicious!

Method

  1. On medium-high heat, add 1 tablespoon of oil then add chicken, season with salt and pepper, and sauté until cooked.
  2. Remove cooked chicken from pan and set aside.
  3. In the same pan, heat 1 tablespoon of oil and add mushrooms.
  4. When the mushrooms are soft, add broccoli florets and stir-fry until the broccoli is tender.
  5. Remove cooked mushrooms and broccoli from the pan and set aside.
  6. Add 1 tablespoon of oil to the pan and sauté garlic and ginger until fragrant. Add the remaining sauce and stir.
  7. Return the chicken and vegetables to the saucepan; stir until heated through.
