- Fresh blueberries 1 cup
- Sugar/sugar substitute 4 tbsp
- Unbleached flour 2 tsp
- Ground cinnamon ⅛ tsp
- Vanilla almond or rice milk ⅓ cup
- Reduced fat biscuit/baking mix 1 cup

Method
- In a small bowl combine sugar/sugar substitute, flour, and cinnamon. Set aside.
- In a separate bowl combine biscuit/baking mix, and milk.
- Spread half of batter into a 1 quart baking dish coated with cooking spray.
- On top of batter add half of the blueberries and half of the sugar/sugar substitute mixture.
- Repeat layers with remaining batter, blueberries, and sugar mixture.
- Bake at 350 degrees for 25-30 minutes or until the toothpick comes out clean.
