  • Fresh blueberries 1 cup
  • Sugar/sugar substitute 4 tbsp
  • Unbleached flour 2 tsp
  • Ground cinnamon ⅛ tsp
  • Vanilla almond or rice milk ⅓ cup
  • Reduced fat biscuit/baking mix 1 cup

Method

  1. In a small bowl combine sugar/sugar substitute, flour, and cinnamon. Set aside.
  2. In a separate bowl combine biscuit/baking mix, and milk.
  3. Spread half of batter into a 1 quart baking dish coated with cooking spray.
  4. On top of batter add half of the blueberries and half of the sugar/sugar substitute mixture.
  5. Repeat layers with remaining batter, blueberries, and sugar mixture.
  6. Bake at 350 degrees for 25-30 minutes or until the toothpick comes out clean.
