  • Corn starch 1 ½ tsp
  • Orange juice 1 cup
  • Unsweetened applesauce 1/3 cup
  • Orange extract ¼ tsp
  • Whole wheat flour 1 ¼ cups
  • Sugar 2 tbsp
  • Baking powder 2 tsp
  • Sea salt ½ tsp

Method

  1. Place the orange juice, applesauce and extract in a blender; cover and process until smooth.
  2. In a bowl, combine thecornstarch, flour, sugar, baking powder and salt; make a well in the center.
  3. Add the orange juice mixture; stir until moistened.
  4. Pour batter by 2 tbsp. full onto a hot griddle coated with cooking spray. Turn when bubbles form on top; cook until second side is browned.
  5. Serve with marmalade.
