  • Orange juice concentrate 1/3 cup
  • Egg whites 3
  • Vegetable oil 1/3 cup
  • Unbleached flour 1 cup
  • Sugar 1 cup
  • Baking powder 1 tsp
  • Ground cinnamon 1 tsp
  • Allspice 1/2 tsp
  • Baking soda 1/4 tsp
  • Sea salt 1/8 tsp
  • Grated carrots 1 cup
  • Confectioners’ sugar 2 tsp

Method

  1. In a large mixing bowl, combine the sugar, oil, orange juice concentrate and egg whites; beat for 30 seconds.
  2. Combine the flour, baking powder, cinnamon, allspice, baking soda and salt; add to the sugar mixture and mix well. Stir in carrots.
  3. Pour into a 8 inch square baking dish coated with cooking spray.
  4. Bake 350 degrees for 30 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool on wire rack. Dust with confectioner’s sugar.
