Ingredients
- Firm but ripe peaches 4
- Blueberries 1 cup
- Raspberries 1 cup
- Freshly squeezed orange juice 2/3 cup
- Honey 2 tsp.
- Brandy 1 Tbsp
- Coconut yogurt (So Delicious brand makes approved yogurt) 1 cup
- Protein free ice cream (optional) 3/4 cup
- Finely grated orange rind 1 Tbsp

Method
- Preheat the oven to 350. Cut the peaches in half, remove the pits, then place in a shallow ovenproof dish.
- Mix the blueberries and raspberries together in a bowl and use to fill the holes left by the pits.
- Mix together the orange juice, honey and brandy in a small bowl and pour mixture over fruit. Blend the yogurt with the grated orange rind and let chill in the refrigerator until required.
- Bake the peaches for 10 minutes, or until the fruit is hot. Serve with ice cream on top.
