Ingredients
  • Firm but ripe peaches 4
  • Blueberries 1 cup
  • Raspberries 1 cup
  • Freshly squeezed orange juice 2/3 cup
  • Honey 2 tsp.
  • Brandy 1 Tbsp
  • Coconut yogurt (So Delicious brand makes approved yogurt) 1 cup
  • Protein free ice cream (optional) 3/4 cup
  • Finely grated orange rind 1 Tbsp

Method

  1. Preheat the oven to 350. Cut the peaches in half, remove the pits, then place in a shallow ovenproof dish.
  2. Mix the blueberries and raspberries together in a bowl and use to fill the holes left by the pits.
  3. Mix together the orange juice, honey and brandy in a small bowl and pour mixture over fruit. Blend the yogurt with the grated orange rind and let chill in the refrigerator until required.
  4. Bake the peaches for 10 minutes, or until the fruit is hot. Serve with ice cream on top.
