Ingredients
- Unbleached flour 1 1/4 cup
- Rolled oats 1 cup
- Packed brown sugar 1/2 cup
- Unsweetened cocoa 1/3 cup
- Baking powder 1 tbsp
- Baking soda 1/4 tsp
- Mashed bananas (ripe) 1 cup
- Vanilla almond milk 1/2 cup
- Margarine (melted) 5 1/3 tbsp
- Vanilla 1 tsp

Method
- Preheat oven to 400 degrees.
- Line 12 medium muffin cups with paper baking liners.
- Combine the flour, oats, brown sugar, cocoa, baking powder and baking soda in a large bowl.
- In a medium bowl, combine the mashed bananas almond milk, margarine and vanilla.
- Add the banana mixture to the dry ingredients and stir until just moistened. Do not over mix.
- Spoon batter into prepared muffin cups and bake 20-25 minutes or until toothpick into the center comes out clean.
- Cool on wire rack.
