  • Unbleached flour 1 1/4 cup
  • Rolled oats 1 cup
  • Packed brown sugar 1/2 cup
  • Unsweetened cocoa 1/3 cup
  • Baking powder 1 tbsp
  • Baking soda 1/4 tsp
  • Mashed bananas (ripe) 1 cup
  • Vanilla almond milk 1/2 cup
  • Margarine (melted) 5 1/3 tbsp
  • Vanilla 1 tsp

Method

  1. Preheat oven to 400 degrees.
  2. Line 12 medium muffin cups with paper baking liners.
  3. Combine the flour, oats, brown sugar, cocoa, baking powder and baking soda in a large bowl.
  4. In a medium bowl, combine the mashed bananas almond milk, margarine and vanilla.
  5. Add the banana mixture to the dry ingredients and stir until just moistened. Do not over mix.
  6. Spoon batter into prepared muffin cups and bake 20-25 minutes or until toothpick into the center comes out clean.
  7. Cool on wire rack.
