  • Old fashioned oats 1 cup
  • Whole wheat flour 1 cup
  • Unbleached flour 1/2 cup
  • Packed brown sugar 3/4 cup
  • Baking powder 2 tsp
  • Salt 1/2 tsp
  • Corn starch 4 Tbsp
  • Vanilla almond milk 3/4 cup
  • Vegetable oil 1/4 cup
  • Vanilla 1 tsp

Method

  1. In a small bowl, combine oats, flours, brown sugar, baking powder and salt. In another bowl, cornstarch, milk, oiland vanilla.
  2. Stir into the dry ingredients just until moistened.Do not over mix.
  3. Fill greased muffin cups 2/3 full.
  4. Bake at 400 degrees for 15-17 minutes or until a toothpick inserted, comes out clean.
  5. Cool 5 minutes before transferring to a wire rack.
