Ingredients
- Old fashioned oats 1 cup
- Whole wheat flour 1 cup
- Unbleached flour 1/2 cup
- Packed brown sugar 3/4 cup
- Baking powder 2 tsp
- Salt 1/2 tsp
- Corn starch 4 Tbsp
- Vanilla almond milk 3/4 cup
- Vegetable oil 1/4 cup
- Vanilla 1 tsp

Method
- In a small bowl, combine oats, flours, brown sugar, baking powder and salt. In another bowl, cornstarch, milk, oiland vanilla.
- Stir into the dry ingredients just until moistened.Do not over mix.
- Fill greased muffin cups 2/3 full.
- Bake at 400 degrees for 15-17 minutes or until a toothpick inserted, comes out clean.
- Cool 5 minutes before transferring to a wire rack.
