  • Sugar 4 tbsp
  • Unbleached flour 2 tsp
  • Ground cinnamon 1/8 tsp
  • Reduced-fat biscuit/baking mix 1 cup, 2 tbsp
  • Vanilla almond or rice milk 1/3 cup
  • Fresh blueberries 1 cup

  1. In a small bowl, combine 2 tbsp. sugar substitute, flour and cinnamon; set aside. In another bowl, combine the biscuit mix, milk and remaining sugar substitute.
  2. Spread half of the batter into a 1 quart baking dish coated with cooking spray; top with half of the blueberries and half of the reserved sugar mixture.
  3. Repeat layers. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted in the center comes out clean. Serve warm.
