  • Country cured ham 1 (10-14 pounds)
  • Whole garlic clove 1
  • Hot water 6 cups
  • Apple cider vinegar 1 cup
  • Worcestershire sauce 1 Tbsp
  • Bay leaves 2

Method

  1. Gently wash the ham under running water. Pat dry and score skin into diamond shapes.
  2. Place a whole clove in each diamond. Insert meat thermometer into meaty part of ham, being careful not to touch fat or bone.
  3. Place ham, fat side up, in large roasting pan with cover. Use heavy-duty aluminium foil to make a cover if necessary.
  4. In a large bowl, combine water, vinegar, and Worcestershire sauce; pour over the ham.
  5. Place bay leaves in liquid. Bake at 325 for 20 minutes per pound or to an internal temperature of 160.
  6. Bake uncovered for the last 30 minutes.
