Ingredients
  • Salmon 12 ounces
  • Egg 1
  • Olive oil 1-2 tablespoons
  • For the breading:
  • Crushed almonds ⅓ cup
  • Grated parmesan cheese ⅓ cup
  • Dried basil 1 tablespoon
  • Garlic powder 1 teaspoon
  • Salt ½ teaspoon
  • Pepper ½ teaspoon

Method

  1. Mix breading ingredients together in large bowl.
  2. Set aside. Whisk egg in a separate bowl. Dredge the salmon in the egg, then the breading mixture.
  3. Heat olive oil in a skillet on medium heat. Once the pan is ready, add the salmon and let cook on one side for 3-4 minutes until golden brown.
  4. Flip and cook for an additional 2-3 minutes on the other side.
  5. Serve salmon with a side of your favorite veggies. We used asparagus.
