Ingredients
- Cooked medium shrimp 2 lb
- Red onion cut into rings 1 medium
- Pitted ripe olives 1 cup
- Olive oil 1/2 cup
- Fresh parsley (minced) 1/3 cup
- Lemon juice 3 tbsp
- Red wine vinegar 3 tbsp
- Bay leaf 1
- Fresh basil (minced) 1 tbsp
- Sea salt 1 tsp
- Ground mustard 1 tsp
- Pepper 1/4 tsp

Method
- In a 3-quart glass serving bowl, combine shrimp, onion, lemon and olives.
- In a jar with a tight-fitting lid, combine the remaining ingredients; shake well.
- Pour over shrimp mixture and gently stir to coat.
- Cover and refrigerate for 24 hours, stirring occasionally. Discard leaf before serving.
