Ingredients
  • Cooked medium shrimp 2 lb
  • Red onion cut into rings 1 medium
  • Pitted ripe olives 1 cup
  • Olive oil 1/2 cup
  • Fresh parsley (minced) 1/3 cup
  • Lemon juice 3 tbsp
  • Red wine vinegar 3 tbsp
  • Bay leaf 1
  • Fresh basil (minced) 1 tbsp
  • Sea salt 1 tsp
  • Ground mustard 1 tsp
  • Pepper 1/4 tsp

Method

  1. In a 3-quart glass serving bowl, combine shrimp, onion, lemon and olives.
  2. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well.
  3. Pour over shrimp mixture and gently stir to coat.
  4. Cover and refrigerate for 24 hours, stirring occasionally. Discard leaf before serving.
