Bake Time
  • Orange juice concentrate 1/3 cuup
  • Egg whites 2
  • Vegetable oil 1/2 cup
  • Unbleached flour 1 cup
  • Sugar 1 cup
  • Baking powder 1 tsp
  • Ground cinnamon 1 tsp
  • Allspice 1/2 tsp
  • Baking soda 1/4 tsp
  • Sea salt 1/8 tsp
  • Grated carrots 1 cup
  • Confectioners’ sugar 2 tsp

  1. In a large mixing bowl, combine the sugar, oil, orange juice concentrate and egg whites; beat for 30 seconds. Combine the flour, baking powder, cinnamon, allspice, baking soda and salt; add to the sugar mixture and mix well. Stir in carrots.
  2. Pour into an 8-inch square baking dish coated with cooking spray.
  3. Bake 350 degrees for 30 minutes or until toothpick inserted in the center comes out clean. Cool on wire rack. Dust with confectioner’s sugar.
