Ingredients
- Orange juice concentrate 1/3 cup
- Egg whites 3
- Vegetable oil 1/3 cup
- Unbleached flour 1 cup
- Sugar 1 cup
- Baking powder 1 tsp.
- Ground cinnamon 1 tsp.
- Allspice 1/2 tsp.
- Baking soda 1/4 tsp.
- Sea salt 1/8 tsp.
- Grated carrots 1 cup
- Confectioners’ sugar 2 tsp.

Method
- In a large mixing bowl, combine the sugar, oil, orange juice concentrate and egg whites; beat for 30 seconds.
- Combine the flour, baking powder, cinnamon, allspice, baking soda and salt; add to the sugar mixture and mix well. Stir in carrots.
- Pour into an 8-inch square baking dish coated with cooking spray.
- Bake 350 degrees for 30 minutes or until toothpick inserted in the center comes out clean.
- Cool on wire rack.
- Dust with confectioner’s sugar.
