Japanese Clear Onion Soup

Bake Time
  • Onions (diced) 2
  • Vegetable (broth) 6 cups
  • Carrots (peeled & diced) 2
  • Garlic cloves (minced) 2
  • Ginger (minced) 1/2 tsp
  • Button mushrooms (thinly sliced) 1 cup
  • Scallions (sliced) 1 cup
  • Salt to taste
  • Pepper to taste
  • Soy Sauce to taste
  • Sriracha to taste

For A Delicious Dinner


  1. Sauté the onions in a pot in a little bit of oil until lightly browned.
  2. Add the carrot, garlic, and ginger and 6 cups of vegetable broth/water.
  3. Bring to the boil and then simmer for 30 minutes.
  4. Season to taste with salt and pepper.
  5. Strain the veggies from the broth.
  6. Add a handful of scallions and mushrooms to bowls. Ladle the soup on top.
  7. Add a splash of soy sauce and sriracha to taste.
