  • Medium onion, sliced and separated into rings 1
  • Reduced-sodium soy sauce 2 tsp
  • Medium tomatoes, cut into wedges 3
  • vinegar 1/2 cup
  • Sugar 1/4 cup s
  • Water 1 cup
  • Fresh coarse ground black pepper 1 teaspoon
  • Oil 1/4 cup
  • Chopped fresh mint (optional) 1 teaspoon
