  • Heads of cauliflower 1 1/2
  • Water
  • Butter 1/2 Cup
  • Heavy cream 1/2 Cup
  • Salt To Taste
  • Pepper To Taste

Note:
We have made this several times now because it was AWESOME, and if you like your "potatoes" more lumpy you can use a hand mixer to blend the cauliflower instead of a blender, or, for our favorite mix, hand mix half and blend half.

It pairs great with any meat dish or P foods you serve...

Method

  1. Break cauliflower in big bite sized pieces then add water until cauliflower floats.
  2. Boil cauliflower for about 40 minutes and then squeeze out excess water with a spoon and strainer.
  3. Mix cauliflower, half a cup or 1 stick of butter and 1/4 cup of heavy cream using a blender. Blend until evenly mixed.
  4. Add extra 1/4 cup of cream if needed, depending on your preferred thickness.
  5. Add salt and pepper to your liking.
  6. Serve and Enjoy!
