- Grated/riced cauliflower 4 cups
- Olive Oil 2-6 tbsp
- Low Sodium Soy Sauce 4 tbsp
- Baby Bella Mushrooms ½ cup
- Medium shrimp 1 lb
- Green Onions 1 cup

Note: Cooking the cauliflower long enough to cook out most of the moisture and crisp the cauliflower is essential to get the rice texture. Make sure you add additional oil as needed and keep it sizzling.
This cauliflower cooking method is so surprisingly good! We never have leftovers!
Method
- Grate 4 cups of Cauliflower.
- Heat about 2 tablespoons of Olive Oil in Wok or large skillet.
- Wait until the oil is hot then add the grated cauliflower to the pan.
- Cook until cauliflower starts to turn brown and crispy. (very important that it starts to dry out, this can take 15-20 mins)
- If it starts to dry out, add more olive oil.
- Add 2 tbsp of low sodium soy sauce.
- Add 3 eggs (scramble on the side before mixing)
- Add 1/2 cup of diced baby bella mushrooms.
- Add 1 pound of bite sized Shrimp.
- Add 2 tbsp more low sodium soy sauce.
- Add 1 cup Green Onions.
- Cook together for 1-2 minutes and serve hot!
