Ingredients
- Warm water 1/2 cup
- Honey 1/4 cup
- Apple sauce 3/4 cup
- Plain coconut yogurt 1 cup
- Vanilla extract 1 tsp
- Zucchini 2 cups
- Flour 2 cups
- Baking soda 1 tsp
- Ground nutmeg 1/2 tsp
- Salt 1/2 tsp
- Dark chocolate chips 3/4 cup

Method
- Preheat the oven to 375 ÌŠF/190 ÌŠC.
- Cut the ends off of zucchini and grate it on the large side of a box grater and set aside 2 cups.
- Whisk together warm water and honey.
- Add eggs, yogurt, honey, and vanilla extract. Whisk.
- Add zucchini and whisk to combine.
- Add flour, baking soda, nutmeg, and salt. Mix to combine.
- Fold chocolate chips into the batter.
- Pour batter into a greased 9×5-inch bread pan.
- Bake for 50-60 minutes, or until a toothpick comes out clean from the middle of the bread.
- Allow to cool for 15 minutes before serving!
